Two local eateries offer specialties on menu

Shand’s Fish and BBQ Restaurant in Holladay come under new ownership earlier this year and has a revamped menu that still features local favorites, according to owners David and Tiffany Jensen.

The duo was behind the scenes for several years before purchasing the eatery from their neighbor in January. Tiffany said, “The restaurant had been here for 13 years and offered some of the best fish and barbecue around so when the opportunity arose for us to continue the business, we jumped on it.”

The Jensens didn’t change much about the restaurant, however; one of the items on the menu got an expansion. The hushpuppies can now be ordered in several varieties. From jalapeno to cheddar, there are hushpuppies to satisfy every pallet. Tiffany said the multiple flavored hushpuppies were the creation of her husband, David who has worked in the kitchen for several years.

Keeping the same employees has been an important part of the new ownership. “We wanted our loyal customers to feel comfortable and know they would get the same great service they always have from Shand’s,” Tiffany explained. Speaking of the customers, David said that remains his favorite experience of restaurant ownership. He said, “The customers and their compliments make all the hard work pay off.”

Tiffany finished with, “We always want to serve up the best food possible at the most reasonable prices and not only keep our loyal customers, but make new friends, as well.”

Another fresh idea for dining is Dossy’s Mac and Burger Truck. Dossy’s owner, Brandon Anderson opened for business on June 4.

Anderson said the concept of opening a food truck actually came from first seeing them on TV. He explained, “I loved the idea of traveling place to place with your food instead of having to stay in one building. It broadens your customer base and gives myself the enjoyment of seeing people eat the food I love to serve.”

As far as the name, Anderson said, “The way I got my name Dossy is an interesting story. I went to Bethel right out of high school to play tennis. One of my now close friends and former teammates, Edwyn Ramos, began to call me Dossy at practice because he explained that’s what Australian’s call people with the name Brandon. Soon enough the whole campus was calling me by it and it stuck. Later the guys and I would joke about naming my first restaurant that, and now we’re here.”

Dossy’s menu is made up of two American standards, macaroni and cheese and hamburgers. Anderson said, “The menu came from what I loved as I was growing up, mac and cheese and burgers! It’s something that I know everyone loves and something I knew we would be able to execute perfectly.”

Anderson’s “right-hand-man” is Cameron Kennedy. He said Kennedy has a huge role with not only the truck but Anderson’s other business in catering services. Anderson smiled, “But if I had to give him a role he would definitely be deemed Grill God.”

The food truck owner said, “My background in cooking started pretty young. I’ve worked in restaurants since i was 15 years old and always knew I wanted to own my own. A lot of my peers and even adults never would’ve guessed it when I was growing up but that’s what I have always dreamed of. That’s what really made me choose UT Knoxville Culinary and Catering as my starter.”

Anderson finished with, “I believe the future is very bright for Dossy’s. We are projecting to open another truck next year in Clarksville. I think for this brand, staying the Food Truck route is our main focus. I believe our customers can agree.”

Most days, customers will find Dossy’s Mac and Burger Truck in the Silver Moon Antique Mall parking lot on Main St. and they are opened from 10 a.m. – 2 p.m.
